Inspired by the produce at the Logan Square Farmer's Market and created using summer squash, zucchini, and oriental express eggplant from Frillman Farms, this fresh vegan curry is made with cashews, coconut milk, and fennel. 

Heat:

Microwave: Remove lid and place in microwave for 2 minutes on high. Stir curry with spoon and place back in microwave for 1 minute.
