Sage Chicken with Butternut Squash Risotto
Tender chicken is marinated in sage, shallot, and garlic. It is paired with creamy risotto, cooked in organic wine (with only naturally-occurring sulfites) and finished with creamy goat cheese and roasted butternut squash. An arugula salad with a white wine vinaigrette is served on the side.
Salmon with Mango Slaw
Pan-roasted salmon is complemented by both black beans with garlic and a fresh mango slaw made with lime, jalapeno, agave, bell pepper, and cabbage. A topping of cilantro, green onion, and grilled sweet mini peppers finish off the dish.
Tuscan Chicken Soup
Chicken sausage is browned with fennel, onion, and garlic before it's simmered with chicken stock, potatoes, heavy cream, and bay leaf. To finish, top with kale ribbons for a splash of color and added nutrition.
This is a favorite Eat Purely staff meal brought to life for our customers. Flavorful steak is cooked with peppers and onions and served with traditional rice and beans. It is served with queso fresco and avocado salsa that's been made from scratch. Remove the queso for a dairy free option.
In this spin on a traditional Mexican dish, adobo-marinated pork is slow-roasted and paired with roasted pineapple, lime cabbage slaw, and rice. Top with the spicy salsa verde to complete the dish.
Sweet Potato Pecan Salad
Tossed with sweet potatoes, quinoa, grape tomatoes, pecans, shaved red onion, and salty feta, baby spinach is topped with housemade balsamic dressing.
